  • 100 g Delaviuda crunchy turron
  • 80 g Delaviuda tender turron
  • 200 g wonton dough
  • 10 ml olive oil
  • 200 g tuna fish
  • 50 ml water
  • 8 g black sesame
  • 10 ml frying oil
  • Add 50 ml of water and 80 g of tender turron to a saucepan and bring to a medium heat. Stir constantly until the turron has melted and the mixture has thickened. Remove from the heat and set aside.
  • Sear the tuna in a frying pan with a little olive oil, cut tataki style and set aside.
  • Cut the wonton dough into squares, fry with 10 ml oil until golden brown and crispy. Remove, drain and set aside.
  • To serve, use the fried wonton as a base, then top with the tuna tataki and add the turron sauce reduction and black sesame seeds.
  • Garnish with some crumbled crunchy turron on top.
